I was out of town yesterday and this morning for work so I didn't get to watch Top Chef and So You Think You Can Dance last night. Needless to say, I've been wanting to get home today so bad so I could watch them both. SYTYCD is up first, then TC. Save the best for last, I say.
I've put a lot of thought into how to get myself motivated to blog more. Because I'm nerd, I thought I would do a culinary term of the day. Some days this may be a pretty common word, other days it might be not so common. This is purely for my enjoyment. I admit, there are times when I read the Food Lover's Companion for entertainment.
Here we go kids, the first ever nerdychef culinary word of the day! I'm starting out with my favorite cooking technique. I think it's my favorite because to do it well requires skill, and when properly executed the result is absolutely delicious.
Braising - From the French braiser is cooking with moist heat, typically in a covered pot with a variable amount of liquid, resulting in a particular flavor. Braising relies on heat, time, and moisture to successfully break down tough connective tissue and collagen in meat. It is an ideal way to cook tougher cuts.
Some of my favorite things to braise are short ribs, oxtail, duck legs, and osso bucco. Perfectly braised osso bucco over good old fashioned mashed potatoes is simply one of the best meals ever.
