Watched Hell's Kitchen last night. I really don't get all the Julia and Waffle House hate. If you can keep up with the pace at Waffle House on a weekend night when all the drunks are out, you're okay in my book. Besides, most of the other people on the show don't have the experience or resume to trashtalk anyone. HK is fun to watch because of Gordan Ramsey. I once worked under a guy who was pretty bad. He wasn't as bad as Ramsey, but still, he was bad. After awhile you learn to just not let it affect you. It actually did make me a better cook. Now that I'm in a position where I run the kitchen I could never talk to people like that though. I think you get better results from people when you aren't trying to intimidate the hell out of them. Top Chef is about people who can actually cook, HK is about being able to take shit and not break down.

Quince: Ancient Romans used the flowers and fruit of the quince tree for everything from perfume to honey. It was also considered a symbol of love and given to one's intended as a sign of commitment. Though the quince has been around for over 4,000 years throughout Asia and the Mediterranean countries, it's not particularly popular with Americans. This yellow-skinned fruit looks and tastes like a cross between an apple and a pear. The hard, yellowish-white flesh is quite dry and has an astringent, tart flavor, which makes it better cooked than raw. Because of its high pectin content, it's particularly popular for use in jams, jellies and preserves. Quinces are available in supermarkets from October through December. Select those that are large, firm and yellow with little or no sign of green. Wrap in a plastic bag and refrigerate for up to 2 months. Peel before using in jams, preserves, desserts and savory dishes.
